Flowers picked by hand and mints grown for their individual aromas. Familiar plants, with plenty left to discover.
Flowers · soft & floral
Matricaria chamomilla
A small flower with a familiar, gently apple-like aroma. We grow chamomile in our Latvian garden, pick the flower heads by hand and dry them in the shade.
The whole dried flower gives a soft, sweet-floral infusion. Keeping the heads intact makes it easy to see the yellow centres and pale petals before they open in hot water.

Mentha × piperita cultivars
Mint has more than one voice. Our garden collection brings together chocolate, blackcurrant and basil mint — each with its own aromatic character.
These are names for mint varieties, not added ingredients.
Wild-gathered · Latvia
Meadows and forest clearings bring a different character: flowering tops, green leaves and the deeper flavours that careful processing can reveal.
One plant · two expressions
Epilobium angustifolium · rosebay willowherb
Its tall pink flowers are striking, but it is the leaf that gives this plant its place in the teacup. The same plant can become a light, meadow-scented infusion or a fuller, darker cup.
Green leaves, softly grassy and hay-like. A pale golden cup that stays close to the fresh leaf’s character.
Known as Ivan Chai. Hand-rolled leaves develop a rounder, honey-like and gently fruity character, with a deeper amber colour.
